We LOVE SOUP...

2nd ANNUAL SOUP  NIGHT WITH THE GASSAWAYS!!   

 

Everyone knows that the Hansen's just love our SOUP!! 

We take SOUP pretty seriously in our family! 

So much so that we have SOUP NIGHTS A LOT!!

 
There's the traditional Stew and Hocus Pocus Movie Night at Halloween time (we've been doing this since Cayla was a baby - WOW that's along time).  Then of course the first SOUP of the cold season (cuz everyone who lives in AZ knows its not cold at Halloween time), Rainy day SOUP, Sick Day SOUP (which we just had again last week)...
 
...There really doesn't need to be a reason in our family to have soup!  We just LOVE SOUP!!
 
But last year we started a new tradition with our extended new family...THE BIG SOUP NIGHT!!  Can we say heaven on earth!! 



 
See Cayla got married and created our new extended family with the Gassaways!!  Whoowho!!  We love them to death and really didn't want to only see them during the holidays or birthdays, so that's how the BIG SOUP NIGHT came to be with the Gassaways!  (We've done soup nights with other families but this one will keep going and going...we hope)
 
So I make about 5 different SOUPS each year and the Gassaways and their grandparents (who also come to our little get together) each bring a pot of SOUP each!  And then we eat SOUP all night long, play games, visit and eat MORE SOUP!! 
 
What a fun night of SOUP!! 
 
Enjoy some of the recipes from this year...
 
Zuppa Toscana  (from Steak N Potatoes Kinda Gurl)
(I've changed up their recipe a little)
 
9 slices of bacon, diced (Turkey bacon works also)
1 lb ground sweet Italian sausage
1 large red or yellow onion, diced
4 cloves garlic, minced
4 cups chicken stock
3 to 6 cups russet potatoes, cubed  (depends on your taste)
3/4 tsp sea salt
1/4 tsp ground black pepper
2 cups kale, washed and cut into bite size pieces
about 1 1/2 cups heavy whipping cream (may need a little more or less)
Parmesan cheese, grated, to taste
In a large pot, cook bacon until crispy. Drain the grease.  Add the sausage, breaking it apart as it cooks.  Once sausage is browned and crumbled, remove sausage and drain off grease leaving a tbsp. to sauté the onion. 
Add the onion to the pan; sauté until translucent; add garlic; sauté until fragrant.  Add the bacon and sausage back into pot. 
Stir in the stock and potatoes, season with salt and pepper and simmer about 20 minutes or until potatoes are tender.
Add kale and heavy whipping cream.  Bring to a simmer.  Top with Parmesan when serving.
 
Mushroom Barley Soup (from Taste of Home)
 
1 1/2 lbs boneless beef chuck, cut into 3/4 cubes
1 tablespoon oil
2 cups finely chopped onion
1 cup diced carrots (I usually added more)
1/2 cup sliced celery (I usually added more)
1 lb fresh mushrooms, sliced (you can never have too many so add more)
2 garlic cloves, minced
1/2 teaspoon dried thyme
1 can beef broth
1 can chicken broth
2 cups water
1/2 cup medium pearl barely
1 tsp salt
1/2 tsp pepper
In a dutch oven brown meat in oil.  Remove meat with slotted spoon and set aside.  Sauté onion, carrots and celery in drippings over medium heat until tender, about 5 minutes.  Add mushrooms, garlic, and thyme; cook and stir for 3 minutes.  Add broths, water and barley, salt and pepper.
 
Return meat to pan; bring to a boil. Reduce heat; cover and simmer for 1 1/2 to 2 hours or until the barley and meat are tender.
 
Tortellini Soup
 
3 tbsp. butter
2 garlic cloves, finely chopped
4 medium celery stalks, chopped fine  
4 medium carrots, chopped fine
1 small onion chopped
3 cans for chicken broth and 3 cans of water (if using your own broth make sure to use equal amounts of water and broth)
1 20oz of fresh cheese filled tortellini (can also use chicken and mix and match)
1/2 tsp pepper
1 tsp of ground nutmeg
Freshly grated Parmesan cheese
Melt butter in  Dutch oven over medium-low heat.  Cover and simmer garlic, celery, carrots and onion in butter for 10 minutes. 
Stir in broth and water.  Heat to boiling.
Gently put in fresh tortellini.  When the tortellini floats to the surface, about 6 to 8 minutes stir in pepper and nutmeg.  Cover and simmer about 10 more minutes.
Serve in bowls sprinkle each with parmesan cheese.
 
Stuffed Cabbage Stoup (from Food network-Rachael Ray)
 
4 tablespoons extra virgin olive oil.
1 cup of long grain rice 
1 quart plus 2 cups chicken stock, divided
1 1/2 pounds ground meat (can use turkey, beef)
Salt
Pepper
2 tsp of Garlic Mesquite Grill
(or you can use 2 tsp smoked paprika, 1 1/2 tsp coriander)
1/2 tsp allspice
1 onion, chopped
2 cloves garlic, minced
3 carrots, thinly sliced
3/4 head of cabbage, thinly sliced (I use the whole cabbage)
1 (28 oz) can diced tomatoes
1 cup tomato sauce
Heat a sauce pot over medium high heat with 2 turns of the pan of olive oil.  Add the rice and toss to coat in oil.  Add 2 cups of chicken stock, bring up to a simmer, cover and cook for 16 to 18 minutes unitl rice is tender. 
Heat a deep pot over medium high heat.  Add the remaining olive oil, once hot add meat and begin to brown, 2 to 3 minutes.  Season the meat with allspice, salt, pepper, mesquite (coriander/paprika).  Add onions garlic and carrots.  Cook veggies 2 to 3 minutes to begin to soften them, then add cabbage and wilt it down a bit.  Add tomatoes, tomato sauce, and remaining stock and cover the pot.  Raise the heat to high and bring to a simmer.  Simmer for 10 minutes.  Once the rice is cooked, spoon some in a bowl and pour soup over the top. 
 


Crafty week...

Last week was a very busy crafting week for me... 

There was a lot of simple crafts to get done in a short amount of time!!

 
First up was Seth's play!
Seth was playing the wizard in "Munchkin Mediation". 
It was a play the Jr. Drama Club got to perform at the High School and Seth (if I do say so myself) was AMAZING...he even sang a solo! 
I think we found something he really enjoys!  Bout time if you ask me! 
 
 
But that brought me to my first and second crafts! 

What do you give a boy in a show?!?
You give girls flowers and balloons,
BUT WHAT DO I GIVE SETH...
 I gave my kid BUCKETS and BOUQUETS of CANDY...
 
What an AWESOME MOM I am...giving my kid all this sugar!!
 
 Next was what to give the teachers (directors), because again, I didn't want to give flowers and one of them was a man...hummmm, well you can NEVER go wrong with chocolate in my book!


It was very easy to put these together...all you needed was:
Paper, stamps, ink, tape, paper cutter and ribbon
 
As soon as I got these together it was back to stamping for my monthly "Card Club".
I've always loved stamping and making cards and this way I get to make cards and visit with friends every month...the catch:  you have to make ten of the same card!
Well, I missed last month and we were doing two sets last month.  That's 20 cards, plus this month, so that's 30 cards...it was a busy stamping week!

 
 




 
 
Can I just say I love stampin!!  Its so much fun, I think the hardest part for me is coming up with the ideas, but once I have them...I'm off! 
 
 

 



I'll put it out there...

Electronics and I...we'll, we just don't see EYE TO EYE!!

It doesn't matter what I do, we just don't get along!!
 
 Let me give you the short back story!!
Two years ago I had your typical old fashion flip phone!  My flip phone and I got along just great for years!!  And when I say years I mean it, the only time I had any real issues was when I lost it and had to buy a new one!  I could drop, throw, kick (yes, I did kick my phone, after I had dropped it), my phone NEVER gave me any problems!  We were a true match!!
 
But I, being your typical human, ok WOMAN!!  Well, I wanted MORE!!  I wanted one of those phones that could take pictures (yep no picture phone for me back in the day), I wanted to be on FB, play lots of games (not just the ones that came with the phone)...I WANTED MORE!!  So hubby trying to be sweet (little did I know it would be a curse and a nightmare!), for Christmas 2 years a go got me what I thought was my dream phone!! 
 
From day one, it was a NIGHTMARE!!! But I thought it was me cuz I was new to all this new phone stuff!  But it wasn't me!!  It was the PHONE!!  DJ got the same phone and his worked perfect!  Figures! I suffered with that phone for 2 long painful years of NO memory, which it had...resetting back to factory setting, every few months...till finally, for Christmas again, hubby got me a new phone...Hallelujah...NOT!!!
 
GUESS WHAT?!?!  Problems already!!  This time if they continue I'm NOT waiting 2 years for a new phone!!  I'm pretty sure my phone company knows me by name now cuz I call all the time!
 
I really hate electronics sometimes...I wont even start on my new laptop and the issues I started having! 
Why can't electronics and I just get along...I'm willing!!

Where has the time GONE...

I know we all do it...
We look back at our lives and ask, "Where the heck has all the time gone!"
And of course as we get older we ask that question MORE AND MORE...Now I'm not sayin I'm old!!  (That would be DJ, my darlin hubby who's old)...BUT I will say I am getting older!  (Geesh when the heck did that happen!)
 
Anywho, there are times I ask that a lot about time.  Of course my kids think time has STOPPED for them.  But didn't we all think that at some point in life! 
 
For example this last month...
For me its just flown by!!  Well most of it!  There was a week that went on and on and on and on (oh,WAIT... I think you get it). Its crazy to think we are already halfway into February. WHERE HAS ALL THE TIME GONE!!
 
However if you were to ask Josh (one of my little pills) if time is speeding by, he'll probably give you a dirty look (and if looks could kill, look out).  I think this last month has been the slowest in his life.
WHY...
Well, 3 days before the end (yes the end) of Christmas break, Josh decided it would be fun to break his wrest.
 
Humm, I guess I should explain. Its not like he went out to break it on purpose, but it did happen.
HOW- you ask...
WELL, he received THE BEST CHRISTMAS GIFT EVER from his aunt Stacy and uncle James (Thanks guys...can't wait to see what you get him next Christmas, seems like each year the gifts are getting more and more dangerous but he is a boy,).  Its called a single skate.  Its a skate board thing the size of your foot and you steer it with you other foot.  He really likes it!  So he was out riding it, hit a rock, flipped up and over, cut up his body and well I guess the rest is history (his little brother said it looked really cool).  He was in a hard cast for 4 weeks and now in a soft cast for another 4.  The dr. says no pollvolting for track (which really really bums him out a lot cuz track started a few weeks ago and this has kind of slowed him down on training). 
 
Because of all this time just is slowly going by for the kid!  Yesterday he tried to open a bottle of Gatorade and he couldn't (he had NO arm strength). Trying not to laugh (OK I really didn't do a good job), I stood there watching...then watched as his friend tried to open it...again laughter just couldn't stay in me...I finally took the bottle and opened it for him...Can I say Blahahahahahahahahaha!!!
 
At my age each day doesn't seem long enough.  I feel like I need more time. Sleep is over rated, RIGHT!?!  Days just speed by.  But for poor poor broken Josh time is just slowly ticking by...

THAT WAS THE ONE THING.....

...Have you ever had just one little thing be enough to just push you over the edge?  Just that one little thing that, yes even though it was important, may not of been that major to make you go CRAZY! 

Well, I was already walking on the fin line of craziness this weekend as it was and this one little thing was the one thing to push me over the TOP...

What was it you ask...WELL I'LL TELL YOU...

I CAN'T FIND MY CAMERA!!!  (No BIG DEAL normally cuz I have 2 small back up ones right, but NO!!  This one has important pics that I haven't down loaded yet and the back up ones aren't charged yet).  

So YES BIG DEAL........MAJOR DRAMA DEAL!!!! 

So, see with how my weekend has been~ just for your info...its been BAD...This had been ENOUGH to make me CRAZY!!! UGH!!!  

Whats worst is I had it the other day...Then it was GONE~ GONE I TELL YOU~GONE....

Did someone take it out of my car~All my pictures GONE~GONE I TELL YOU~GONE~UGH~double UGH!!!

The worst part of it...I really needed it Sunday too!!  And you know what will happen, I'll find it after the fact (at least I hope I will) Isn't that the way it always works!! 

Now you all are asking~what brought me to this point~~if only I could tell you ~~ my life would be so much simpler ~~ But BOY is it a dosy!!! But I wouldn't even know where to begin, so for now I'll keep it to myself!!  

BUT I WANT MY CAMERA !!  
BUT I GUESS LIFE MUST GO ON!

It came~We survived~We CONCORED!!!

That's right!!!
Christmas came...We SURVIVED it...and I will say we CONCORED IT!!!! 
Whoowho US!!

Its become a Family Tradition to have a BIG CHRISTMAS EVE get together at our house every Christmas Eve...and what do we do...well we EAT!!!  Food is very important to our family (all you have to do is look at my waistline to know that)...We have anywhere from 20 to 40 people show up and all of them are family...some are adopted family but they are ALL our family......AND WHY DO THEY ALL COME...WELL FOR THE FOOD (well and to see me of course cuz that's all that matters) 

 




Its also Christmas Eve when we open gifts from family that we might not see on Christmas day...



 And of course there was the traditional Christmas PJ's given out for Christmas...All the kids got them...Josh, Seth, even Eric and Cayla and Craig (even though we had issues with Craigs size-oops, my bad)






 
That night we had our visit from Santa...What was really fun since Cayla had just had Eric, they decided to stay the night at our house instead of driving all the way home. Unfortunately for them, it was a long night with Eric (welcome to parenthood guys), but they seemed to be asleep at the right times when Santa came...funny how that works!

Josh really got into his gift opening!! Or is he guarding his gifts so that no one takes them...its hard to tell!
 
I think Grandpas favorite part of opening gifts was holding Eric
 
Seth was just finding one gift after another he could open, even if it wasn't his he wanted to open it and for Cayla and Craig, they were able to just sit back, enjoy and relax while they opened their gifts.
 
DJ finally decided to put Eric down and start opening his gifts...it was a hard thing for him to do!
 
Even Dakota wanted to show off her new toys from Santa...see her orange ball in her mouth!

Mia didn't want to play with the toys...she just wanted to see what all the fuss was about with this new little baby...she is SOOOOO fascinated with him!
All the excitement of the morning wore both grandpa and baby Eric out, so they decided to take a short cat nap while the rest of us cleaned, baked and played!!

Josh really loves holding him, OR does he do it to get out of doing work around the house!!  Either way I think he'll be a GREAT uncle!! Hey but don't tell him that...I don't want him to get a big head!!! 
 
Christmas morning was great!! Cayla, Craig and Eric headed over to Craigs folks to spend the rest of Christmas with them and to talk to Craigs brother who is serving a mission (what a fun Christmas to meet your new nephew)  The rest of our day was a nice relaxing day...we spent it with the boys, relaxing, watching movies and just having fun!! 
 
Like I say...
Christmas CAME...sometimes I think it comes faster and faster ever year!!
We SURVIVED...I didn't think we would...I mean really Cayla having a baby, we weren't sure when she would...it was ify/ify! And all she wanted was to be home for Christmas Eve!!   
AND
We CONCORED!!!  Because the day went perfect, we had fun, we enjoyed and we relaxed! 
What more could you ask for!!!

So Grandpa DJ and me Grandma Suzi are so excited...we can't wait to spoil baby Eric...watch out Cayla and Craig...MUHAHAHAHAHAHAHAHA!!!  Revenge shall be sweet!!
 
Its still hard for DJ to take in that his baby girl has had a baby but I think he kind of likes having a grandson...he has another little boy to teach all his sneaky skills too! 
 
Josh just thinks its kind of cool being an uncle...for some reason he really likes holding Eric...I'm starting to think he does it get out of work around the house...hummmmmmm.
 
Seth still thinks being an uncle is strange but he is liking the idea of all the mischief he can teach Eric...However I do know what a big help he is with Jerrae's kids so I know he'll be a BIG help with Eric.
 
I of course am very excited to have my first grandchild.  I think Cayla and Craig did a good job and we'll keep Eric around and not send him back, which I'm sure will make Cayla VERY happy! 
 
This was the first day Seth and Josh got to meet Eric...I think they kind of liked him! 
 
Cayla, Craig and Eric have been adjusting to their new lives together.  Its been fun, its been a little scary, its be a little over whelming at times, and its been joyful!  And whats great is they will be just fine!!
